Ingredients 

Cupcakes

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup coconut milk
  • 0.5 cup crushed pineapple, drained

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, then mix in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk. Fold in the crushed pineapple.
  5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.
