Ingredients 

Main Ingredients

  • 4 medium zucchinis spiralized
  • 1 lb shrimp peeled and deveined
  • 1 cup basil leaves
  • ¼ cup pine nuts toasted
  • ½ cup Parmesan cheese grated
  • 2 cloves garlic
  • ½ cup olive oil
  • to taste salt and pepper

Instructions 

  1. 1. Spiralize the zucchinis and set aside.
  2. 2. In a blender, combine basil, pine nuts, Parmesan cheese, garlic, and olive oil. Blend until smooth to make the pesto.
  3. 3. Heat a skillet over medium heat. Add shrimp and cook until pink, about 3-4 minutes per side.
  4. 4. Add the zucchini noodles to the skillet and toss with the shrimp for 2-3 minutes.
  5. 5. Remove from heat and toss with the pesto sauce. Season with salt and pepper to taste.
  6. 6. Serve immediately.
