- 2 cups All-purpose flour
- 1 tablespoon Baking powder
- 1 teaspoon Salt
- 1 cup Milk
- 2 Eggs
- 1 cup Shredded mozzarella cheese
- 1 cup Pepperoni slices, chopped
- 1 cup Pizza sauce
Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
In a large mixing bowl, whisk together the flour, baking powder, and salt.
In another bowl, whisk together the milk and eggs. Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the shredded mozzarella cheese and chopped pepperoni.
Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely. Serve with pizza sauce for dipping.
