  • 1.5 cups All-purpose flour
  • 1 cup Sugar
  • 0.5 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 2 Large eggs
  • 1 cup Whole milk
  • 0.5 cup Vegetable oil
  • 2 teaspoon Vanilla extract
  • 1 teaspoon Peppermint extract
  • 1 cup Hot brewed coffee

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, vanilla extract, and peppermint extract. Mix until smooth.
  4. Stir in the hot brewed coffee until well combined. The batter will be thin.
  5. Pour the batter into the cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cupcakes cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
