Peppermint Mocha Cookies

Main Ingredients
- 1 cup butter softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 units eggs
- 2 cups all-purpose flour
- ½ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup chocolate chips
- ½ cup crushed peppermint candies
Preheat oven to 350°F (175°C).
Cream together the butter and sugar until light and fluffy.
Beat in the vanilla and peppermint extracts, then add the eggs one at a time.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the chocolate chips and crushed peppermint candies.
Drop by rounded tablespoon onto ungreased baking sheets.
Bake for 10 minutes or until edges are set. Cool on baking sheets for 2 minutes before transferring to wire racks to cool completely.
