Pecan Pie Bars

Crust
- 1 cup all-purpose flour
- ½ cup unsalted butter cold and cubed
- ¼ cup granulated sugar
Filling
- 3 large eggs
- 1 cup light corn syrup
- 1 cup granulated sugar
- 2 tablespoon unsalted butter melted
- 1 teaspoon vanilla extract
- 2 cups pecan halves
Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
In a mixing bowl, combine flour, cold butter, and sugar for the crust. Press into the bottom of the prepared pan. Bake for 15 minutes.
While the crust is baking, prepare the filling. In a large bowl, whisk together eggs, corn syrup, sugar, melted butter, and vanilla extract until smooth. Stir in pecans.
Pour the filling over the hot crust. Bake for an additional 30 minutes, or until set. Let cool before cutting into bars.
