Ingredients 

Main Ingredients

  • 2 large zucchinis
  • 1 lb chicken breast thinly sliced
  • ½ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • ¼ cup water
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped peanuts and green onions for garnish

Instructions 

  1. Spiralize the zucchinis into noodles and set aside.
  2. In a bowl, mix peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, and water until smooth.
  3. Heat olive oil in a pan over medium heat. Add chicken, season with salt and pepper, and cook until no longer pink.
  4. Add the peanut sauce to the pan and stir to coat the chicken.
  5. Toss in the zucchini noodles and cook for 2-3 minutes until tender.
  6. Serve with chopped peanuts and green onions on top.
