Instructions
Heat the oil in a wok over medium-high heat.
Add the chicken and cook until browned, about 5-7 minutes.
Add the mixed vegetables and stir-fry for another 5 minutes.
In a small bowl, mix peanut butter, soy sauce, honey, garlic, and ginger.
Pour the sauce over the chicken and vegetables, stirring to coat evenly. Cook for another 2-3 minutes.
Serve hot over rice or noodles.
