  • 1 cup Butter softened
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar packed
  • 2 Eggs large
  • 1 teaspoon Vanilla Extract
  • 3 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 24 Mini Peanut Butter Cups

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. Combine flour, baking soda, and salt; gradually add to the creamed mixture.
  5. Shape dough into 1-inch balls and place a peanut butter cup in the center of each ball, covering completely with dough.
  6. Place cookies 2 inches apart on ungreased baking sheets.
  7. Bake for 10 minutes or until edges are lightly browned.
  8. Cool on wire racks.
