Peanut Butter Cup Cheesecake Bars

Crust
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup melted butter
Filling
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- ½ cup sour cream
- 1 teaspoon vanilla extract
- ½ cup peanut butter
Topping
- 1 cup chocolate chips
- ½ cup heavy cream
- ½ cup chopped peanut butter cups
Preheat oven to 325°F (163°C). Line a 9x13 baking pan with parchment paper.
Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan.
Beat cream cheese and sugar until smooth. Add eggs, one at a time, then sour cream, vanilla, and peanut butter. Mix until combined.
Pour filling over crust. Bake for 35 minutes or until set. Let cool.
Heat chocolate chips and heavy cream until smooth. Pour over cooled cheesecake. Sprinkle with chopped peanut butter cups. Chill before serving.
