Peanut Butter Buckeyes Recipe

- 1 cup Peanut Butter
- ½ cup Butter softened
- 1 teaspoon Vanilla Extract
- 3 ¾ cups Powdered Sugar
- 2 cups Semisweet Chocolate Chips
- 2 tablespoons Shortening
In a large mixing bowl, beat peanut butter, butter, and vanilla extract until smooth.
Gradually add powdered sugar, beating until well blended.
Shape into 1-inch balls and place on a baking sheet lined with parchment paper. Insert a toothpick into each ball. Chill in the freezer for about 30 minutes.
In a microwave-safe bowl, melt chocolate chips and shortening, stirring until smooth.
Dip the peanut butter balls into the melted chocolate, leaving a small portion of peanut butter showing at the top. Place back on the baking sheet.
Refrigerate until chocolate is set. Remove toothpicks before serving.
