Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup milk
  • ½ cup peanut butter
  • ¼ cup honey
  • 2 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • ¼ cup chocolate chips (optional)

Instructions 

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, mix oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk milk, peanut butter, honey, mashed bananas, and vanilla extract until smooth.
  4. Combine wet and dry ingredients. Stir in chocolate chips if using.
  5. Divide the mixture evenly among muffin cups.
  6. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool before removing from the tin.
