Peach Thyme Galette

Galette Dough
- 1.5 cups all-purpose flour
- 1 tablespoon sugar
- 0.5 teaspoon salt
- 0.5 cup cold unsalted butter cut into cubes
- 0.25 cup ice water
Filling
- 4 cups sliced peaches
- 2 tablespoon sugar
- 1 tablespoon cornstarch
- 1 teaspoon fresh thyme leaves
- 1 tablespoon lemon juice
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until it resembles coarse crumbs. Gradually add ice water until dough forms.
Roll out dough on a floured surface into a 12-inch circle. Transfer to prepared baking sheet.
In another bowl, mix peaches, sugar, cornstarch, thyme, and lemon juice. Arrange mixture in the center of the dough, leaving a 2-inch border.
Fold the edges of the dough over the filling, pleating as you go. Bake for 40 minutes or until crust is golden and filling is bubbly.
Let cool slightly before serving.
