Ingredients 

Galette

  • 1 sheet Pie crust store-bought or homemade
  • 3 cups Peaches sliced
  • 1 cup Raspberries
  • ¼ cup Sugar
  • 1 tablespoon Cornstarch
  • 1 teaspoon Lemon juice freshly squeezed
  • 1 Egg beaten, for egg wash
  • 1 tablespoon Coarse sugar for sprinkling

Instructions 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the sliced peaches, raspberries, sugar, cornstarch, and lemon juice. Toss gently to mix.
  3. Roll out the pie crust on a lightly floured surface. Transfer it to the prepared baking sheet.
  4. Place the fruit mixture in the center of the pie crust, leaving about a 2-inch border around the edges.
  5. Fold the edges of the crust over the fruit, pleating as needed to create a rustic look.
  6. Brush the crust with the beaten egg and sprinkle with coarse sugar.
  7. Bake for 40-45 minutes, or until the crust is golden brown and the fruit is bubbly.
  8. Allow the galette to cool slightly before serving. Enjoy!
