Ingredients

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter cut into small pieces
  • 1 cup fresh peaches peeled and diced
  • 1 tablespoon grated fresh ginger
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 large egg beaten, for egg wash

Instructions 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
  4. Gently fold in the peaches and ginger.
  5. In a small bowl, whisk together heavy cream and vanilla extract. Pour into the dry ingredients and mix until just combined.
  6. Turn the dough out onto a floured surface and gently knead a few times. Pat into a circle about 1-inch thick. Cut into 8 wedges and place on the prepared baking sheet.
  7. Brush the tops with beaten egg. Bake for 18-20 minutes, or until golden brown.
  8. Cool on a wire rack before serving.
