Ingredients

  • 1 package Pie crust store-bought or homemade
  • 4 cups Peaches sliced
  • ¼ cup Sugar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Cornstarch
  • 1 unit Egg beaten, for egg wash
  • 1 tablespoon Coarse sugar for sprinkling

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the pie crust on a piece of parchment paper.
  3. In a mixing bowl, combine the sliced peaches, sugar, lemon juice, vanilla extract, and cornstarch.
  4. Place the peach mixture in the center of the pie crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the peaches, pleating as you go.
  6. Brush the crust with the beaten egg and sprinkle with coarse sugar.
  7. Bake for 40 minutes or until the crust is golden brown and the peaches are bubbly.
  8. Let cool slightly before serving.
