Preheat your oven to 375°F (190°C).
In a mixing bowl, combine flour, granulated sugar, and salt. Add cold butter cubes and mix until the mixture resembles coarse crumbs.
Gradually add ice water and mix until the dough comes together. Form the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
In another bowl, combine peaches, brown sugar, cinnamon, and lemon juice. Set aside.
Roll out the dough on a floured surface into a 12-inch circle. Transfer to a baking sheet.
Place the peach mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the peaches.
Bake for 45 minutes or until the crust is golden brown and the peaches are tender. Let cool before serving.
