Ingredients

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter cut into small pieces
  • 1 cup heavy cream
  • 1 cup fresh peaches peeled and diced

Instructions 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream until just combined, then fold in the diced peaches.
  5. Turn the dough out onto a floured surface and shape into a circle about 1-inch thick. Cut into 8 wedges.
  6. Place the wedges on the prepared baking sheet and bake for 18-20 minutes, or until golden brown.
  7. Let cool slightly before serving.
