Crust
- 1.5 cups Graham Cracker Crumbs
- ¼ cup Sugar
- ½ cup Butter, melted
Filling
- 16 oz Cream Cheese, softened
- 1 cup Sugar
- 2 large Eggs
- 1 teaspoon Vanilla Extract
Peach Topping
- 4 cups Peaches, sliced
- ½ cup Brown Sugar
- 1 teaspoon Cinnamon
Preheat oven to 350°F (175°C).
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a baking pan to form the crust.
In another bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla extract, and mix until well combined. Pour over the crust.
In a separate bowl, mix sliced peaches, brown sugar, and cinnamon. Spread over the cream cheese mixture.
Bake for 45 minutes or until the top is golden and the cheesecake is set. Let cool before cutting into bars.
