Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together flour, baking powder, and salt.
In another bowl, beat the eggs and sugar until thick and pale. Add milk and vanilla extract, and mix well.
Gradually fold the dry ingredients into the wet mixture until just combined.
Spread the batter evenly on the prepared baking sheet. Bake for 12-15 minutes or until the cake is golden and springs back when touched.
Remove the cake from the oven and let it cool slightly. Then, gently roll the cake with the parchment paper and let it cool completely.
Unroll the cooled cake and spread whipped cream evenly over it. Sprinkle diced peaches on top.
Carefully roll the cake back up without the parchment paper. Chill in the refrigerator for at least 1 hour before serving.
