Ingredients

  • 1 cup orzo
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup feta cheese, crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. Cook the orzo according to package instructions. Drain and set aside to cool.
  2. In a large mixing bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Pour over the orzo mixture and toss to combine.
  4. Season with salt and pepper to taste. Serve chilled or at room temperature.
