Main Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon poppy seeds
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup plain yogurt
- ½ cup vegetable oil
- 2 large eggs
- 1 tablespoon orange zest
- ¼ cup orange juice
- 1 teaspoon vanilla extract
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, whisk together flour, sugar, poppy seeds, baking powder, baking soda, and salt.
In another bowl, mix yogurt, vegetable oil, eggs, orange zest, orange juice, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Divide the batter evenly among the muffin cups.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
