  • 1 cup almond flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup sugar
  • 3 eggs
  • ½ cup olive oil
  • 2 oranges (zest and juice)
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a bowl, mix polenta, almond flour, baking powder, and salt.
  3. In another bowl, beat sugar and eggs until fluffy. Add olive oil, orange zest, juice, and vanilla.
  4. Combine wet and dry ingredients. Pour into the pan.
  5. Bake for 45 minutes or until a toothpick comes out clean. Cool before serving.
