- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- 1 cup pistachios, chopped
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the eggs and mix in the vanilla extract and orange zest.
Combine the wet ingredients with the dry ingredients, then fold in the chopped pistachios.
Shape the dough into a log and place it on the baking sheet. Bake for 25 minutes.
Remove from the oven and let cool for 10 minutes. Slice the log into ½-inch thick slices.
Place the slices back on the baking sheet and bake for another 15 minutes, until golden brown.
