Preheat your oven to 350°F (175°C). Grease and flour your loaf pans.
In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
Stir in cranberries and orange zest.
In another bowl, mix together orange juice, vegetable oil, vanilla extract, and beaten egg.
Add the wet ingredients to the dry ingredients and stir until just combined.
Pour the batter into the prepared loaf pans.
Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
Let the loaves cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
