Main Ingredients
- 1 cup butter softened
- 1 cup brown sugar packed
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 0.5 teaspoon salt
- 3 cups quick oats
- 1.5 cups butterscotch chips
Preheat oven to 375°F (190°C).
In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add to the wet ingredients and mix until just combined.
Stir in the oats and butterscotch chips.
Drop by rounded tablespoonfuls onto ungreased baking sheets.
Bake for 8-10 minutes or until the edges are golden brown. Cool on baking sheets for 1 minute before transferring to wire racks to cool completely.
