Ingredients 

Main Ingredients

  • 1 cup Rolled oats
  • 1 cup Milk
  • 1 cup All-purpose flour
  • ½ cup Brown sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 cup Blueberries
  • 1 Egg
  • ¼ cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners.
  2. In a bowl, combine oats and milk. Let it sit for 10 minutes.
  3. In another bowl, mix flour, brown sugar, baking powder, baking soda, and salt.
  4. Add the egg, oil, and vanilla extract to the oat mixture. Stir well.
  5. Combine the wet and dry ingredients. Do not overmix.
  6. Fold in the blueberries gently.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
