Instructions
Melt butter in a large pot over medium heat.
Add chopped onion and celery, cook until softened.
Add potatoes and fish stock, bring to a boil.
Reduce heat and simmer until potatoes are tender, about 10-15 minutes.
Add fish chunks and cook until fish is opaque, about 5 minutes.
Stir in heavy cream, season with salt and pepper to taste.
Garnish with chopped parsley before serving.
