  • 2 cups all-purpose flour
  • 1 cup unsalted butter softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ¼ cup cocoa powder
  • ¼ cup strawberry jam
  • 2 drops red food coloring

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the dough into three equal parts. Mix cocoa powder into one part, strawberry jam and red food coloring into the second part, and leave the third part plain.
  7. Roll each portion of dough into a log, then stack the logs together and gently press to adhere.
  8. Slice the dough into ¼-inch thick cookies and place them on the prepared baking sheet.
  9. Bake for 12-15 minutes, or until the edges are lightly golden. Let cool on a wire rack.
