Mushroom Swiss Cheese Frittata

- 8 eggs
- 1 cup sliced mushrooms
- 1 cup shredded Swiss cheese
- 1 small onion, chopped
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
Preheat your oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
Add sliced mushrooms to the skillet and cook until they release their moisture and start to brown.
In a mixing bowl, whisk together the eggs, salt, and black pepper.
Stir in the cooked onions and mushrooms, and then add the shredded Swiss cheese.
Pour the mixture into the skillet and cook on the stove for a few minutes until the edges start to set.
Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the frittata is fully set and golden on top.
Remove from the oven, let it cool slightly, then slice and serve.
