Ingredients 

Main Ingredients

  • 1 cup Arborio Rice
  • 2 tablespoon Olive Oil
  • 1 cup Chopped Onions
  • 2 cloves Garlic minced
  • 2 cups Sliced Mushrooms
  • 4 cups Chicken Broth warmed
  • 1 cup Grated Parmesan Cheese
  • 2 tablespoon Butter
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pan over medium heat. Add the onions and garlic, and sauté until translucent.
  2. Add the mushrooms and cook until they release their moisture and become tender.
  3. Add the Arborio rice and stir to coat the grains with oil. Cook for 1-2 minutes.
  4. Begin adding the warm chicken broth one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding more broth.
  5. Continue this process until the rice is creamy and cooked through, about 18-20 minutes.
  6. Stir in the Parmesan cheese and butter. Season with salt and pepper to taste. Serve hot.
