- 1 cup barley
- 8 oz mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and garlic, sauté until softened.
3. Add sliced mushrooms and cook until they release their moisture.
4. Stir in barley, vegetable broth, thyme, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 45 minutes, or until barley is tender.
6. Adjust seasoning to taste and serve hot.
