Ingredients 

Main Ingredients

  • 1 cup wild rice uncooked
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 cups mushrooms sliced
  • 1 cup celery chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup parsley chopped

Instructions 

  1. 1. Cook the wild rice according to package instructions using the vegetable broth instead of water.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. 3. Add the mushrooms and celery to the skillet, and cook until tender.
  4. 4. Stir in the thyme, sage, salt, and pepper. Cook for another minute.
  5. 5. Combine the cooked wild rice and the vegetable mixture in a large mixing bowl. Stir in the chopped parsley.
  6. 6. Transfer the mixture to a baking dish and bake at 350°F (175°C) for 20-25 minutes.
