Ingredients 

Main Ingredients

  • 4 pieces Chicken Breasts boneless, skinless
  • 1 cup Mushrooms chopped
  • 2 cups Spinach fresh
  • 1 cup Mozzarella Cheese shredded
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add mushrooms and cook until soft.
  3. Add spinach to the skillet and cook until wilted. Remove from heat and let cool.
  4. Cut a pocket into each chicken breast. Stuff with the mushroom and spinach mixture, then add mozzarella cheese.
  5. Secure the chicken breasts with toothpicks if necessary. Season with salt and pepper.
  6. In a baking dish, heat the remaining olive oil over medium heat. Sear the chicken breasts on both sides until golden brown.
  7. Transfer the baking dish to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
  8. Remove from oven and let rest for 5 minutes before serving.
