Mix warm water and honey in a bowl. Sprinkle yeast on top. Let it sit for 5 minutes.
In a large bowl, combine whole wheat flour, rolled oats, sunflower seeds, flaxseeds, chia seeds, sesame seeds, and salt.
Pour the yeast mixture into the dry ingredients. Mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes.
Place the dough in a greased bowl, cover, and let it rise for 1 hour.
Preheat the oven to 375°F (190°C).
Punch down the dough and shape it into a loaf. Place it in a greased loaf pan.
Bake for 40 minutes or until the bread sounds hollow when tapped.
Let it cool before slicing.
