  • 2 cups all-purpose flour
  • 2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 0.25 cup molasses
  • 0.25 cup granulated sugar, for rolling

Instructions 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.
  3. In a large bowl, beat together butter and 1 cup sugar until light and fluffy. Beat in egg and molasses until well combined.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Roll dough into 1-inch balls, then roll in remaining sugar. Place on prepared baking sheet, spacing 2 inches apart.
  6. Bake for 8-10 minutes, until cookies are set and tops are cracked. Cool on baking sheet for 5 minutes, then transfer to wire racks to cool completely.
