Ingredients 

Crust

  • 1.5 cups chocolate cookie crumbs
  • 0.25 cup melted butter

Filling

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1 cup heavy cream
  • 1 cup chocolate chips, melted

Instructions 

  1. Preheat oven to 325°F (160°C).
  2. Mix chocolate cookie crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla and peppermint extracts.
  4. Fold in heavy cream and melted chocolate chips until well combined. Pour over crust.
  5. Bake for 55-60 minutes or until center is set. Cool on a wire rack. Refrigerate for at least 4 hours before serving.
