Brownie Ingredients
- ½ cup unsalted butter melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ⅓ cup cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ½ cup chocolate chips
Mint Layer Ingredients
- ¼ cup unsalted butter softened
- 1 cup powdered sugar
- 2 tablespoon milk
- ½ teaspoon peppermint extract
- 2 drops green food coloring optional
Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan.
In a mixing bowl, combine melted butter and sugar. Add eggs and vanilla extract, and mix well.
Stir in cocoa powder, flour, and salt until just combined. Fold in chocolate chips.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
For the mint layer, beat together softened butter, powdered sugar, milk, peppermint extract, and food coloring until smooth. Spread over cooled brownies.
Chill in the refrigerator for at least 30 minutes before cutting into squares.
