Mint Chocolate Brownie Sundae

Brownie Ingredients
- ½ cup butter
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ⅓ cup cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon baking powder
- ½ cup mint chocolate chips
Sundae Ingredients
- Vanilla ice cream
- Chocolate syrup
- Fresh mint leaves for garnish
Preheat oven to 350°F (175°C). Grease a 9x9 inch baking pan.
Melt butter in a medium saucepan. Remove from heat and stir in sugar, eggs, and vanilla.
Beat in cocoa, flour, salt, and baking powder. Fold in mint chocolate chips.
Spread the batter into the prepared pan.
Bake in preheated oven for 20 to 25 minutes. Do not overcook.
Let brownies cool, then cut into squares.
To serve, place a brownie square in a bowl, top with a scoop of vanilla ice cream, drizzle with chocolate syrup, and garnish with fresh mint leaves.
