Ingredients

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 4 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup milk room temperature

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour mini loaf pans.
  2. In a mixing bowl, cream the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  5. Pour the batter into the prepared mini loaf pans, filling each about ⅔ full.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
