Mini Powdered Sugar Donut Muffins

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup granulated sugar
- ¼ cup unsalted butter, melted
- 1 large egg
- ½ cup milk
- 1 teaspoon vanilla extract
- ½ cup powdered sugar for coating
Preheat your oven to 350°F (175°C). Grease a mini muffin pan.
In a mixing bowl, whisk together the flour, baking powder, and salt.
In another bowl, mix the sugar, melted butter, egg, milk, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Fill the mini muffin pan cups about ¾ full with the batter.
Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool for a few minutes, then roll them in powdered sugar while still warm.
Place the coated muffins on a cooling rack to finish cooling. Enjoy!
