Ingredients 

Crust

  • 1 package Refrigerated Pie Crusts softened as per package instructions

Filling

  • 1 cup Pecans chopped
  • cup Brown Sugar packed
  • ½ cup Corn Syrup
  • 2 tablespoon Butter melted
  • 1 teaspoon Vanilla Extract
  • 2 Eggs beaten

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a muffin tin.
  2. Roll out the pie crusts and cut into circles to fit the muffin tin. Press the circles into the muffin tin cups.
  3. In a mixing bowl, combine the chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, and beaten eggs. Mix well.
  4. Spoon the filling into the pie crusts in the muffin tin.
  5. Bake for 25 minutes or until the filling is set and the crust is golden brown.
  6. Let the mini pecan pies cool in the muffin tin for 5 minutes before transferring to a wire rack to cool completely.
