Ingredients 

Crust

  • 1 cup graham cracker crumbs
  • 2 tablespoon sugar
  • 4 tablespoon butter, melted

Filling

  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 2 tablespoon lime juice
  • 1 tablespoon tequila optional
  • 1 teaspoon vanilla extract
  • 2 eggs

Instructions 

  1. Preheat oven to 325°F (163°C). Line a muffin tin with paper liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of each muffin liner.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add lime juice, tequila (if using), and vanilla extract. Mix well.
  4. Add eggs one at a time, beating well after each addition. Pour filling over crusts in muffin tin.
  5. Bake for 20-25 minutes or until centers are set. Cool completely before serving.
