Ingredients 

Crust

  • 1 cup Graham cracker crumbs
  • 2 tablespoon Sugar
  • 4 tablespoon Butter, melted

Filling

  • 16 oz Cream cheese, softened
  • cup Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat oven to 325°F (163°C). Line a muffin tin with paper liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of each muffin cup.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla, and mix until combined.
  4. Divide the filling evenly among the muffin cups. Bake for 18-20 minutes or until set.
  5. Let cool completely before serving. Refrigerate for at least 2 hours.
