Minestrone Soup Delight

Main Ingredients
- 2 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 Carrots, diced
- 2 Celery stalks, diced
- 1 Zucchini, diced
- 1 can Diced Tomatoes (14.5 oz)
- 6 cups Vegetable Broth
- 1 can Cannellini Beans (15 oz), drained and rinsed
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- 1 cup Pasta (small shapes)
- to taste Salt and Pepper
- 1 cup Fresh Spinach (optional)
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic, cook until softened.
3. Stir in the carrots, celery, and zucchini. Cook for about 5 minutes.
4. Add the diced tomatoes, vegetable broth, and beans. Bring to a boil.
5. Add the oregano and basil. Reduce heat and simmer for 20 minutes.
6. Stir in the pasta and cook until tender, about 10 minutes.
7. Season with salt and pepper to taste. Stir in spinach if using.
8. Serve hot and enjoy!
