Ingredients 

Main Ingredients

  • 2 large Zucchini spiralized into noodles
  • 1 cup Cherry Tomatoes halved
  • ½ cup Kalamata Olives pitted and sliced
  • ¼ cup Red Onion thinly sliced
  • ½ cup Feta Cheese crumbled

Dressing

  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 clove Garlic minced
  • 1 teaspoon Dried Oregano
  • to taste Salt and Pepper

Instructions 

  1. 1. Spiralize the zucchini into noodles and place them in a large mixing bowl.
  2. 2. Add the cherry tomatoes, kalamata olives, red onion, and feta cheese to the bowl.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and dried oregano. Season with salt and pepper to taste.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Serve immediately or refrigerate for up to 2 hours before serving.
