Mediterranean Couscous Salad

Main Ingredients
- 1 cup couscous
- 1 cup boiling water
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ¼ cup red onion, finely chopped
- ¼ cup kalamata olives, pitted and sliced
- ¼ cup feta cheese, crumbled
- 2 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- to taste salt and pepper
1. In a saucepan, bring the water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
2. In a large mixing bowl, combine the couscous, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
3. In a small bowl, whisk together the olive oil, lemon juice, and oregano. Pour over the couscous mixture and toss to combine.
4. Season with salt and pepper to taste. Serve chilled or at room temperature.
