In another bowl, beat the butter and sugar until light and fluffy. Add the maple syrup, vanilla extract, and ground cinnamon, and mix until combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Roll out the dough on a floured surface to about ¼ inch thickness. Use a star-shaped cookie cutter to cut out cookies and place them on the prepared baking sheet.
Bake for 8-10 minutes, or until the edges are lightly golden. Let cool on a wire rack.
