- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- ¼ cup maple syrup
- 2 tablespoons Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups baby carrots
- 2 cups broccoli florets
- 1 red bell pepper, sliced
Preheat oven to 375°F (190°C).
In a small bowl, mix maple syrup, Dijon mustard, garlic powder, salt, and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken breasts and cook until browned on both sides, about 5 minutes per side.
Pour maple syrup mixture over the chicken.
Add baby carrots, broccoli florets, and red bell pepper to the skillet.
Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
