Maple Almond Cranberry Granola

Granola Ingredients
- 3 cups Rolled oats
- 1 cup Almonds, chopped
- ½ cup Maple syrup
- ¼ cup Coconut oil, melted
- 1 teaspoon Vanilla extract
- ½ teaspoon Salt
- 1 cup Dried cranberries
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the oats and chopped almonds.
In a separate bowl, whisk together the maple syrup, melted coconut oil, vanilla extract, and salt.
Pour the wet ingredients over the oat mixture and stir until everything is well coated.
Spread the mixture evenly on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown.
Remove from the oven and let it cool completely. Stir in the dried cranberries.
Store in an airtight container for up to two weeks.
